Pan-seared (or grilled) swordfish steaks caramelized in ghee or oil, finished with a squeeze of lemon—ideal for a juicy, medium-rare result

Moofish Swordfish Steaks
Dry herbs/spices of choice

PAN METHOD\
Step 1
Heat a large cast-iron or heavy-based frying pan over medium to high heat. When the ghee is smoking, add the swordfish.
Step 2
Reduce heat to medium and caramelise fish well on one side.
Step 3
Transfer the pan to the oven for 4 minutes. This cooking time is suited to a swordfish steak that is approximately 2cm thick and about 200-250g.
Step 4
Remove the fish from the oven and rest for 1 minute. Season with lemon juice, olive oil, salt and pepper.
BBQ METHOD
Step 1
Cook on the BBQ grill on medium to high heat.
Step 2
Brush the steaks with oil and cook for 2-3 minutes each side.
Step 3
The flesh should be slightly translucent in the middle once cooked (medium).ent and click Change Content. To manage all your collections, click on the Content Manager button in the Add panel on the left.
